I am working on an e-cookbook set that will include recipes I haven’t put on the website.
I wanted the covers of the books to reflect the tasty recipes inside. That meant I had to learn basic food photography. I shot somewhere between 1,000 and 2,000 photos to get these. It was a lot of fun, but my learning curve was steep.
The next step is to format the books. They’re all written, I just need to get them ready for publication. I’ll let you know when each book is available.
This book will have all the introductory information on using cast iron and healthier ingredients. It will include the recipes on my website under “Basics” plus more recipes like Vegan Cream Cheese, Homemade Honey Ketchup, and Eggplant as Pasta.
Pamelita’s Tortalita Soup. So good with tortilla chips and we use the leftovers over eggs for Huevos Tortalita. Recipes will include Curried Corn Soup, Thyme Chickpea and Kale Soup, and Tomato and Artichoke Sauce.
This is a photo Gluten-Free, Vegan Sandwich Bread and Vegan Cream Cheese. It’s almost impossible to find a yummy, healthy sandwich bread without gluten or eggs. This loaf was made with almond flour, but I also have a nut-free version. Recipes will include Blueberry Loaf (both vegan and egg-based,) Crepes (both vegan and egg-based,) and a couple different Pancake recipes.
Roasted Asparagus and Mushrooms. So easy. (I know that looks like a lot of food, but it’s only one bunch of asparagus and 8 ounces of mushrooms.) Recipes include Bruschetta, Chickpea Fritters, and Savory Brussels Sprouts.
Broccoli, Mushrooms, and Cashews in a Red Curry Sauce over quinoa. (One kid loves broccoli, the other loves mushrooms. This is a win-win dish in our house.) Recipes will include Potato Tacos, Mushroom Sausage, and Green Beans with Shitake and Almonds.
Strawberry Crepe with Vegan Chocolate Pudding and Whipped Coconut Cream with a homemade chocolate flower on top. I think that says it all. Recipes will include Pecan Caramel Cookies, Easy Chococolate Coconut Ice Cream, and Chocolate Torte (with the understated name.)
Curried Corn Soup, Honey-Tamari Brussel Sprouts, Huevos Rancheros, Salty Portabella Strips Sandwich made with Vegan, Gluten-Free Bread, a Homemade Chocolate Bowl with Whipped Coconut Cream and Strawberries, and a cup of Hot Liquid Caramel. Okay, I couldn’t eat that much food at one sitting, but after the photo shoot the whole family sat down and we ate it all up. This book will include all the recipes and information from the other books in one book.
