These little pots seem to have two primary purposes in our house: warm leftovers and melt baking chocolate. We don’t have a microwave so when we have leftovers to warm we either put them in the toaster oven or in these pots. I will place the food and a little water in one of these dutch ovens then I’ll cover them and set them on a very low heat setting. I walk away briefly and when I come back they’re usually finished warming. For chocolate I don’t need a double boiler. I place the chocolate in the pan and turn it on a very, very low setting. I don’t let the pot get so hot that I can’t touch it. Within a few minutes, the chocolate is melted and ready to use.
